Customer Story: Ristorante Pizzeria Dennis – Consistency and Ease in Everyday Kitchen Operations

When Ristorante Pizzeria Dennis relaunched its operations in May 2023, the goal was to ensure that the familiar and beloved flavors offered to customers remained unchanged. In this equation, the local company atSauce was chosen as a partner, and together they began producing the restaurant’s salad dressing.
Although atSauce was a new company for Dennis, a shared understanding was quickly established-
"The recipe for the salad dressing was already in place, and together with atSauce we reviewed the consistency to make it exactly right. It turned out very well,” says restaurateur Kim Rafkin.
The salad dressing is used in the restaurant’s popular cabbage salad, which is served as Dennis’s starter. Because the dressing is used in large quantities, outsourcing its production to atSauce has brought significant relief to the restaurant.
"Our salad dressing is used extensively in our restaurant, as many people come specifically for our cabbage salad. When atSauce prepares the dressing for us, it significantly reduces the workload in our kitchen and speeds up our routines. The taste does not differ from our original dressing, it is the same familiar flavor as before,” Rafkin explains.
Consistency as a Guarantee of Quality
In a restaurant kitchen, consistency is a critical factor. At the beginning of this year, Dennis introduced fermented products, which are now widely used in cooking, such as in sauce bases. With these fermented products, Dennis has been able to achieve a much more consistent preparation process. A good example of this is the classic Cacio e pepe pasta.
"Before we started using fermented black pepper, we received feedback that the pasta was too peppery. The amount of pepper is a matter of taste, but with fermented pepper we have been able to keep the flavor exactly the same every time. This has allowed us to serve consistent portions, and we no longer receive such feedback,” Rafkin says.
"Fermented products have simplified our preparation processes and ensure a consistent end result every time,” Rafkin continues.
Ease for Busy Kitchen Operations
In addition to quality, atSauce’s products have brought tangible ease to the kitchen’s daily routines. When some components are pre-prepared to a high standard, the kitchen can save time and energy for other tasks.

"We have always received products when we need them, and the cooperation has been very flexible. Even on a tight schedule, the products are ready and waiting if we pick them up ourselves. It’s great to work with a local company. The partnership has worked extremely well,” Rafkin says.
